4 two-inch thick tuna steaks
2 4oz. containers of crumbled feta cheese
FRESH dill (small palm-full, chopped)
FRESH oregano (small palm-full, chopped)
(dried herbs will fail you in this recipe--go with FRESH)
Extra Virgin Olive Oil
Fresh ground black pepper
Sea Salt
Slice a pocket in the middle of the side of the tuna steaks.
Mix the feta, dill and oregano in a bowl.
Stuff the steaks with the feta mixture.
Brush steaks with the EVOO, season with salt and pepper.
Grill to desired doneness.
Goes great with a medium-bodied red wine, or a robust white, like Chardonnay.
