  • Lobster (Seafood) Shepherds Pie

    This recipe is a bit lengthy but I can assure you, its worth it. You can substitute crabmeat, scallops and shrimp as you wish.

    Start by cutting up a pound of thick sliced bacon into 1" pieces. Put in a pan with some thyme and cook on medium heat until all the fat is rendered. Once rendered, place the bacon on a paper towel to drain.

    In a separate pan, add 2 cleaned leeks sliced. 2 carrots sliced. 4 shallots diced. A little more thyme and tarragon. 1 stalk of celery diced.3 cloves garlic smashed or diced small. Add a couple tablespoons of the bacon grease and 2 tablespoons of butter. Cook on med/high until the shallots and celery become translucent. Add 1 cup of cooking sherry. Let the sherry reduce 1/2 in volume. Add 2 cups of heavy cream. Cook until the cream reduces to 1/2.

    Turn the burner off. Add meat from 3 two pound lobters chopped. I have made this reducing the amount of lobster and adding crab, scollops or shrimp.

    Make a batch of mashed taters.

    Pour the cream-meat into a 9x13 casserole dish. Top with the mashed potatoes. Sprinkle with a little paprika or old bay. Bake in the oven for 25-30 minutes. Let set for 10-15 minutes.

    Serve to you Mrs and get full permission to purchase the new electronics you've been wanting!
