View Full Version : Ok here's another, STUFFED ROCKFISH

I haven't actually tried making this yet but I have had it & it is excellent!
2 Rockfish fillets
1 14oz-16oz crab meat
3 slices of white bread take crust off
3 tsp. worsheshire sauce
3 tbsp. mayo
1tbsp. old bay
2 eggs
Mix everything in a bowl. Take the fillets & season both sides. Take your baking pan & spray it with pam & lay the first fillet in & cover it with your mixed up crab meat. Then lay the other fillet on top & add 1/8 inch water in the pan & cover. Bake 1hr at 350. Try it you'll love it! Charlie

I like the sound of this one. Maybe I can even get my wife to try it with the crab meat.

I took a friend from work down towards the end of spring trophy season & had to work a little but managed to put a 38 & 36 in the box for him. He cooked some up this week & brought it to work. I had to have that recipe. Like I said I haven't tried making it myself but this is the recipe he gave me. Trust me it is excellent! Charlie

Just put it in the oven. I"ll let you know how it turns out. The only change was I substituted Italian bread crumbs for the bread.

This has to be one of the best dishes I have ever had. You guys need to give it a try.

Glad you liked it Tom. Did your wife eat some? I must admit this has to be the best fish recipe I stumbled upon. I made some myself over the weekend one thing I found out is the recipe says to cover the bottom of the pan with 1/8'' of water which I did & covered the top with tin foil. When the fish was done I had about 1" of water in the bottom wich actually soked in the stuffing. Next time I think I will skip the water & just add a couple of spoons of butter (better for the heart) & maybe poke some hole in the tin foil. It still turned out good though. Charlie

Been catching a ton of rockfish and always looking for another recipe, how thick were the fillets I have em anywhere from 1/2 inch thick to three inches thick at the shoulders off some 40lbers we caught this past week. Is it really one hour at 350 that sounds long? Thanks I'm gonna cook it up this weekend
